Top quality Sicilian fizz made from 100% Grillo grapes. Surprising? Yes, it is, as it's particularly fine and fresh, with great balance, spectacular fruit and a refreshing zingy burst of acidity. The secondary fermentation takes place in small, closed stainless steel tanks, and is started using a very special yeast which works very slowly at lower temperatures, to maintain freshness and fruit. Located in Modica, one of Sicily's most ancient areas for wine production. Here, the fifty hectare estate lies close enough to the Mediterranean to benefit from it's cooling breezes, this coupled with its sandy loam topsoil sitting over a well drained limestone base creates a perfect healthy, organic grape growing environment. An estate to watch, the wines just keep improving and the new Fiano is a superb example. Their No Added Sulphur 'Insieme' really does prove that 'less is more'!
