Situated between Tulbagh and Ceres, close to Wolseley and at the foothills of the Witzenberg Mountain Range, Waverley Hills is an organic estate with a three-way focus – it’s role in nature conservation, organic farming, and the production of quality organic wines. An official WWF Conservation Champion, Waverley Hills champions biodiversity and as such sets aside about 20% of the estate for conservation, land containing critically endangered veld types such as Breede Shale Renosterveld, Breede Alluvium Fynbos and Breede Shale Fynbos. Indigenous plants and animals are protected, alien vegetation kept at bay, and natural predators are used to keep the vineyards clear of pests. Snails are almost exclusively the food of choice of their family of white ducks! Work includes fertilizing with composts and manures, the use of cover crops for soil improvement, irrigation with pure spring water, and a complete shy away from toxic chemicals. The fertile, yellow clay terrain is impregnated with river stones, resulting in well-drained soils with excellent water holding capacity. Since 2001 a total of 30 hectares of vineyards and 10 hectares of olive groves have been planted and cultivated organically. All grapes and olives used for Waverley Hills are cultivated on the estate which is run and owned by the Du Toit family – a family with more than 40 years wine industry experience. The organic wines produced here are pure, free of pesticides, fungicides, herbicides or chemical fertilisers and contain up to 50% less sulphur than conventionally produced wines. Waverley Hills’ wines are organically certified by ECOCERT, based in France, but conducts inspections in over 80 countries making it one of the largest organic certification organizations in the world. Their awards include being the first organic farm to achieve the Biodiversity and Wine Initiative Championship status in 2009 and the first organic wine to be selected on SAA Premium Class for 2010.
