Supernatural Wine Co. - 2018
De-stemmed without crushing, fermented at cool temperatures with indigenous yeast. Seven days on skins, fermentation finished off skins to ensure minimal oxidation. Matured for six months in neutral oak on its lees to develop texture before being bottled unfined, unfiltered and unsulphured. Fun fact: ‘Preservative 220’ is additive name for sulphur dioxide, hence ‘Minus 220’. Tiny quantities available.
A waxy, honeysuckle and lemon, lime and bitters nose with hints of pear and ginger. Rich and textural in the mouth with flavours of ripe grapefruit and firm stonefruit. Delicate in structure yet powerful in flavour.

Bottle is sealed with beeswax. The wine itself is suitable for vegans.
