This limited edition, single cask bottling has been named to represent the shield of the first patron, Chris Philips, a proud investor in Da Mhile's first cask of organic single malt Welsh whisky.   Description: A Welsh distillery that is often overlooked, Da Mhile has released its first single malt, an organic-certified whisky named after the shield of one of its first patrons, Chris Phillips. The whisky is sourced from a single oloroso sherry cask. Nose: Herbal, medicinal, and spicy insanity. Cinnamon predominates but then gives way to mint and Vic’s Vaporub. Liquorice and cumin also coming through. It’s a huge nose. Taste: Dual herbal and sweet layers run together side by side. On one hand is the cinnamon, heated butter, brown sugar, and milk chocolate. On the other is the basil, rosemary, mint, liquorice, and cherry Tylenol. They complement each other nicely. Overall: Not for everyone. This is a really weird whisky, but totally unique. 8.5/10 Felipe Schrieberg - Forbes August 2020

Dà Mhìle, pronounced da-vee-lay and meaning Gaelic for two thousand, began life in 1992 when John Savage-Onstwedder commissioned the world's first organic whisky (of the modern era at least) to be made to celebrate the millenium in 2000. The whisky is still being produced (but the original bottles from 1992 are now highly sought after), but they have have also expanded into gin and liqueurs, produced using their own copper pot still in Wales.
