The separate vineyard lots are fermented seperately and then blended by chief winemaker Dave Koball. Stylistcially with its feet in Bordeaux, the addition of Petite Sirah, Syrah, and Carignan add spice and complexity with nuances of New World fruit flavours. The resulting wine has aromas of black plums, dark cherries and a touch of oak. In the mouth, this wine has an elegant and restrained style with nice structure and balance, soft tannins and a long finish.
Bonterra are one of the biggest names in organic winemaking. Their farming practices are ‘back to the future’: composting, cover crops, and natural cycles create a soil that is rich and vital, from which grow naturally healthy vines and intensely concentrated, flavourful grapes. Bob Blue, winemaker at Bonterra was recently quoted as saying 'The organic system is a food system that more and more people have come to trust. I can remember in my earlier days seeing a skull and crossbones sign by one vineyard, saying “Don’t go into this vineyard for 30 days”!'
