
For vegetarians and vegans it can be frustrating that there is no obligation on the part of producers to declare the use of animal by-products in the winemaking process. Products such as egg whites, casein, gelatine and isinglass can all be used as fining agents to clarify wines (brighten their appearance). These agents do not remain in the wine, but sink to the bottom of the vat, where they are left behind once the wine has been ‘racked off’.
